We are seeking a skilled and detail-oriented Sushi Chef to join our culinary team at Ganbei Izakaya. The ideal candidate has a strong foundation in traditional Japanese sushi techniques, a deep respect for ingredients, and the ability to execute consistently in a fast-paced izakaya environment. This role requires precision, efficiency, and a commitment to quality, presentation, and authentic Japanese culinary standards.
応募資格
• Proven experience as a Sushi Chef or Sushi Cook in a Japanese restaurant or izakaya.
• Strong skills in nigiri, sashimi, rolls, and fundamental Japanese knife techniques.
• Experience with fish breakdown and seafood handling.
• Knowledge of Japanese ingredients, seasonality, and flavor balance.
• Ability to work efficiently in a high-volume, fast-paced environment.
• Strong attention to detail, cleanliness, and consistency.
• Team-oriented mindset with a professional and respectful attitude.
• Flexibility to work evenings, weekends, and holidays.
• Formal culinary or sushi training is an asset but not required with relevant experience.
